Passion-fruit water ice

Sally Gunnell's Passion-fruit water ice
This is one of my favourite puddings: its fresh and palate-tingingly sensational. A joy to eat and a delight to make quick, easy and ready to go into the freezer in 20 minutes.
Preparation: 10 minutes
Cooking time: 15 minutes
Serves: 4
Ingredients

  • 225 g (8 oz) caster sugar

  • 8 passion-fruits

  • 1 egg white

The Recipe
  • Put the caster sugar in a large, heavy-based saucepan with 600 ml (1 pint) water. Heat gently, stirring occasionally, until the sugar has dissolved. Bring to the boil and boil gently for 10 minutes. Leave to cool.
  • Cut the passion-fruits in half. Scoop out the flesh and sieve to remove the seeds. Stir into the cooled sugar syrup and pour into a freezerproof container. Freeze for 2 hours until just beginning to freeze around the edges.
  • Whisk the egg white until stiff. Remove the passion-fruit mixture from the freezer and stir with a fork to break up any large ice crystals. Fold in the whisked egg white and return to the freezer until ready to use. Remove from the freezer 15 minutes before serving. Spoon into glasses and serve immediately.
