Stir-fried bok choy with noodles
You can cook up a storm in the kitchen by making the recipe below.  Wow your friends with your cooking skills and amaze even more when you tell them whose recipe it is!
Colin Jackson's Stir-fried bok choy with noodles
This recipe is great – not only is it good for me but it tastes good too. I often stir-fry some protein, such as prawns or chicken, and add it to the stir-fry with the mushrooms and bok choy.
Preparation: 5 - 10 minutes
Cooking time: 10 minutes
Serves: 1
Ingredients
25 g (1 oz) wholemeal angel-hair pasta or spaghetti
1 tablespoon soy sauce
1 tablespoon teriyaki sauce
2 tablespoons dry sherry
1 teaspoon minced ginger
2 teaspoons olive oil
125 g (4 oz) bok choy, sliced
125 g (4 oz) shiitake mushrooms, thickly sliced
2 spring onions, sliced
The Recipe
  • Cook the pasta in a pan of lightly salted, boiling water for 5 minutes. Drain well and set aside.
  • Mix together the soy and teriyaki sauces, sherry and ginger in a small bowl.

Heat the oil in a large frying pan or wok. Add the bok choy and mushrooms and stir-fry for 2 minutes. Pour over the sauce, add the pasta and stir-fry for a further 2 minutes. Add spring onions, mix well and serve immediately.
